My girlfriend made these splendidly delicious blueberry muffins today, so I thought I’d share the recipe. They’re pretty easy to make from scratch and you’ll be completely finished (including baking time) in just 45 minutes. There is nothing quite like stuffing your fat face with still-warm blueberry muffins on a cold winter morning. Why eat one, when you can also eat five or twelve?!

Ingredients for 12 homemade blueberry muffins you will love
- 280g flour
- 225g sugar (or a sugar alternative is fine too)
- 5g salt
- 15g baking powder
- 120ml oil (we used rapeseed oil)
- 2 eggs
- 120ml milk
- 220g fresh blueberries
- A few drops of vanilla extract
- 12 muffin or cupcake liners (these silicone ones are pretty cool, but we used paper for this as they’re going to our son’s pre-school)
- A muffin tray that can hold 12 muffins, i.e. this one
Preparing and baking a dozen homemade blueberry muffins
Step 1: Pre-heat oven to 180°C / 356°F
Step 2: Put muffin liners in the muffin tray. In case you don’t have liners at all or are opposed to using them (maybe there are anti-liner groups of people, I don’t know), just grease the muffin tray a bit to prevent them from sticking.
Step 3: Stir together the dry ingredients (flour, sugar, salt and baking powder) in a mixing bowl.
Pro Tip: Use a mixing bowl that can also be used well for pouring, f.ex. this one.
Step 4: In a separate bowl, whisk together oil, eggs and milk.
Step 5: Add your oil-egg-and-milk mix, plus a few drops of vanilla extract, to the dry ingredients and mix well.
Step 6: Add fresh blueberries last to the muffin dough and gently mix them in. The goal is to not destroy them completely and rip them to shreds, while still getting them throughout the dough, so really stir carefully on this step and take your time.
Step 7: Distribute the dough evenly into the muffin tray to get a dozen muffins out of it.
Step 8: Bake on the middle rack of your oven for 20-25 minutes.
Step 9: Let the muffins cool off a bit, before you begin stuffing your face with these scrumptious homemade blueberry muffins. Now I’m hungry again.
Okay, maybe we made more than a dozen. But there are hangry children to feed!
